“This year New York state raised the minimum wage for servers from $5 an hour to $7.50 an hour. … Add to this an increase of minimum wage from $8.75 to $9 and an increase in state workman’s compensation by 6 percent, and this will increase our payroll by $52,000. To adapt, we lost six employees, dropped healthcare, cut hours of operation, reduced our menu, doubled up duties, sent people home early and had a slight price increase.”
